Ingredients

  • 6 medium carrots - about 2 cups shredded
  • 2 medium nectarines - diced
  • Small bunch cilantro - chopped
  • ¼ cup lime or lemon juice
  • 1 tablespoon olive oil
  • Pinch of cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup toasted cashews - chopped

Instructions

  • Combine all the ingredients, except for the toasted cashews, in a medium salad bowl and toss well. Garnish with the cashews and serve. You can keep leftovers for up to 2 days.
