Simple cucumber Dill salad

Me: Can I play on the iPad? Can I stay home today? Can I stay up all night?
Can we have sushi tonight? Can I go to a friend’s house?

If you would like your little ones to eat more vegetables, let them prepare the salad. They will eat it for sure. Start with a simple salad like this one or my tomato and cucumber salad. It will keep them busy, but also make them feel good about themselves.

I let my kids use a steak knife to chop the vegetables.

You can also make this salad Asian-style by replacing the dill with scallion, and seasoning it with soy sauce and rice vinegar, instead of salt and lemon juice.

Ingredients

  • 6 Persian cucumbers - peeled and sliced
  • ¼ cup dill - scallion or cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Combine all the ingredients in a medium bowl and toss well.
