My older sister who is a great cook and baker gave me the recipe for this salad. She used to make it a lot when we lived in New York. Her recipe is with pineapple but I didn’t have any so I used blood oranges instead. It’s delicious with both but blood oranges make it look so much more dramatic.
If you bought a sack of blood oranges and not sure what to do with them make my orange madeleines and caramelized oranges.
Waldorf Salad With Blood Oranges
This is a great salad to make in the winter when citrus are in season. It require only 5 ingredients and 10 minutes. The contrast between the sweet and acidic oranges and crunchy earthy celery is outstanding.

Ingredients
- 5 blood oranges diced - or oranges, grapefruit or pomelo
- 4 celery sticks, thinly sliced
- ½ cup pecans, chopped
- Handful cilantro and dill or just one of them, chopped
- Lemon zest from 1 lemon (optional)
- Juice of ½ lemon
- 1 tablespoon mayonnaise or Veganaise
- 1 tablespoon olive oil
- Coarse salt
Instructions
- Put all the ingredients in a medium salad bowl and toss. Taste and correct seasoning. Serve or refrigerate up to 1 day.
